Trinidadian Chili Garlic Pork

Ingredients

  • 2 lbs pork shoulder, cut into 1-inch cubes
  • 3 tbsp soy sauce
  • 2 tbsp chili garlic sauce
  • 1 tbsp brown sugar
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the soy sauce, chili garlic sauce, brown sugar, and minced garlic.
  2. Add the pork cubes to the bowl and toss to coat the meat. Marinate for at least 30 minutes.
  3. Heat the vegetable oil in a large skillet over medium-high heat.
  4. Add the marinated pork cubes and cook until browned on all sides, about 5 minutes.
  5. Add the sliced onion and bell pepper to the skillet and cook for an additional 5 minutes.
  6. Season with salt and pepper to taste.
  7. Reduce the heat to low, cover the skillet, and let the pork simmer for 45 minutes, stirring occasionally.
  8. Once the pork is tender and the sauce has thickened, remove from heat and serve hot.
