Trinidadian Doubles is a popular street food in Trinidad and Tobago, consisting of two baras (flat fried bread) filled with curried chickpeas and topped with various chutneys and sauces.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup water
  • 2 cups cooked chickpeas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp curry powder
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp garam masala
  • 1/2 cup tamarind chutney
  • 1/2 cup cucumber chutney
  • Hot pepper sauce to taste

Instructions

  1. In a bowl, mix the flour, baking powder, and salt. Gradually add water and knead to form a smooth dough. Let it rest for 15 minutes.
  2. Divide the dough into small balls and roll out each ball into a thin circle. Fry in hot oil until golden brown on both sides. Drain on paper towels.
  3. In a pan, sauté the onion and garlic until soft. Add the chickpeas, curry powder, turmeric, cumin, and garam masala. Cook for 10 minutes, mashing some of the chickpeas with a fork.
  4. To assemble, place a spoonful of the curried chickpeas on a bara, top with tamarind chutney, cucumber chutney, and hot pepper sauce. Place another bara on top to make a "double".
