Ingredients
- 1.5 lbs chicken thighs, bone-in and skin-on
- 2 tbsp soy sauce
- 2 tbsp brown sugar
- 3 tbsp fresh ginger, grated
- 4 cloves garlic, minced
- 1 scotch bonnet pepper, finely chopped
- 1 tbsp vegetable oil
- 1 cup chicken broth
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt and pepper.
- In a bowl, mix together the soy sauce, brown sugar, grated ginger, minced garlic, and chopped scotch bonnet pepper.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken thighs and cook until golden brown on both sides.
- Pour the soy sauce mixture and chicken broth over the chicken. Cover and simmer for 20-25 minutes, or until the chicken is cooked through.
- Sprinkle with sliced green onions before serving.
