Trinidadian Ginger Chicken

Ingredients

  • 1.5 lbs chicken thighs, bone-in and skin-on
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 3 tbsp fresh ginger, grated
  • 4 cloves garlic, minced
  • 1 scotch bonnet pepper, finely chopped
  • 1 tbsp vegetable oil
  • 1 cup chicken broth
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. In a bowl, mix together the soy sauce, brown sugar, grated ginger, minced garlic, and chopped scotch bonnet pepper.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken thighs and cook until golden brown on both sides.
  4. Pour the soy sauce mixture and chicken broth over the chicken. Cover and simmer for 20-25 minutes, or until the chicken is cooked through.
  5. Sprinkle with sliced green onions before serving.
