Trinidadian Mango Ginger Chicken

Ingredients
- 4 boneless, skinless chicken breasts, cut into strips
- 2 ripe mangoes, peeled and diced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 red bell pepper, sliced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon brown sugar
- 1 teaspoon cornstarch
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a small bowl, mix together soy sauce, oyster sauce, brown sugar, and cornstarch. Set aside.
- Heat vegetable oil in a large pan or wok over medium-high heat. Add chicken strips and cook until browned and cooked through. Remove from the pan and set aside.
- In the same pan, add onion, garlic, and ginger. Stir-fry for 2 minutes until fragrant.
- Add red bell pepper and diced mangoes to the pan. Cook for an additional 3-4 minutes until the peppers are tender and the mangoes are slightly caramelized.
- Return the cooked chicken to the pan and pour the sauce over the ingredients. Stir well to coat everything in the sauce and cook for another 2-3 minutes.
