Trinidadian Mango Ginger Chicken

Ingredients

  • 4 boneless, skinless chicken breasts, cut into strips
  • 2 ripe mangoes, peeled and diced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix together soy sauce, oyster sauce, brown sugar, and cornstarch. Set aside.
  2. Heat vegetable oil in a large pan or wok over medium-high heat. Add chicken strips and cook until browned and cooked through. Remove from the pan and set aside.
  3. In the same pan, add onion, garlic, and ginger. Stir-fry for 2 minutes until fragrant.
  4. Add red bell pepper and diced mangoes to the pan. Cook for an additional 3-4 minutes until the peppers are tender and the mangoes are slightly caramelized.
  5. Return the cooked chicken to the pan and pour the sauce over the ingredients. Stir well to coat everything in the sauce and cook for another 2-3 minutes.
