Trinxat De La Cerdanya (trinxat De La Cerdanya)

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 small head of cabbage, finely shredded
  • 200g bacon, diced
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and set aside.
  2. In a separate pot, blanch the shredded cabbage in boiling water for 5 minutes. Drain and set aside.
  3. In a large skillet, cook the diced bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the rendered fat in the skillet.
  4. Add the boiled potatoes to the skillet with the bacon fat and mash them with a potato masher.
  5. Add the blanched cabbage to the skillet with the mashed potatoes and mix well. Season with salt and pepper to taste.
  6. Cook the trinxat over medium heat, stirring occasionally, until the bottom is golden and crispy, about 10-15 minutes.
  7. Serve the trinxat hot, topped with the crispy bacon.
