Ingredients

  • 1 kg tripe, cleaned and cut into small pieces
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 1 tbsp paprika
  • 1 tbsp flour
  • 1/4 cup white vinegar
  • 8 cups water
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and sauté until they are soft and translucent.
  2. Add the tripe to the pot and cook for about 10 minutes, stirring occasionally.
  3. Sprinkle the flour and paprika over the tripe, and stir well to coat the pieces.
  4. Pour in the water and add the white vinegar. Season with salt and pepper, then bring the soup to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for about 3 hours, or until the tripe is tender.
  6. Adjust the seasoning if needed, then serve the tripe soup hot.
