Tripe Soup (bulgarian Bliss: Shkembe Chorba)
Tripe Soup, also known as Shkembe Chorba, is a traditional Bulgarian dish that is loved for its rich and comforting flavors. This hearty soup is made with tripe and is often enjoyed as a hangover cure.
Ingredients
- 1 kg tripe, cleaned and cut into small pieces
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 tbsp vegetable oil
- 1 tbsp paprika
- 1 tbsp flour
- 1/4 cup white vinegar
- 8 cups water
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and sauté until they are soft and translucent.
- Add the tripe to the pot and cook for about 10 minutes, stirring occasionally.
- Sprinkle the flour and paprika over the tripe, and stir well to coat the pieces.
- Pour in the water and add the white vinegar. Season with salt and pepper, then bring the soup to a boil.
- Reduce the heat to low, cover the pot, and simmer for about 3 hours, or until the tripe is tender.
- Adjust the seasoning if needed, then serve the tripe soup hot.
