Tripe Soup (ciorbă De Burtă)

Ingredients

  • 1 kg beef tripe, cleaned and cut into small pieces
  • 2 onions, finely chopped
  • 3 carrots, diced
  • 2 celery stalks, chopped
  • 1 red bell pepper, diced
  • 3 tomatoes, chopped
  • 1/2 cup rice
  • 1/4 cup white vinegar
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the tripe to a boil with enough water to cover it. Add the vinegar and let it boil for 10 minutes. Drain and rinse the tripe.
  2. Return the tripe to the pot and add 2 liters of water. Bring to a boil, then reduce the heat and simmer for 1 hour.
  3. Add the onions, carrots, celery, and bell pepper to the pot. Simmer for an additional 30 minutes.
  4. Stir in the tomatoes, rice, parsley, and dill. Season with salt and pepper. Simmer for another 20 minutes, or until the tripe is tender and the rice is cooked.
  5. Adjust the seasoning if needed and serve hot.
