Tripe Soup (ciorbă De Burtă)
Tripe Soup, also known as Ciorbă de burtă, is a traditional Moldovan dish that is loved for its rich and flavorful broth. This hearty soup is perfect for warming up on a cold day and is a popular choice for family gatherings and celebrations.
Ingredients
- 1 kg beef tripe, cleaned and cut into small pieces
- 2 onions, finely chopped
- 3 carrots, diced
- 2 celery stalks, chopped
- 1 red bell pepper, diced
- 3 tomatoes, chopped
- 1/2 cup rice
- 1/4 cup white vinegar
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- Salt and pepper to taste
Instructions
- In a large pot, bring the tripe to a boil with enough water to cover it. Add the vinegar and let it boil for 10 minutes. Drain and rinse the tripe.
- Return the tripe to the pot and add 2 liters of water. Bring to a boil, then reduce the heat and simmer for 1 hour.
- Add the onions, carrots, celery, and bell pepper to the pot. Simmer for an additional 30 minutes.
- Stir in the tomatoes, rice, parsley, and dill. Season with salt and pepper. Simmer for another 20 minutes, or until the tripe is tender and the rice is cooked.
- Adjust the seasoning if needed and serve hot.
