Tripe Soup (sopa De Mondongo)

Ingredients

  • 2 lbs beef tripe, cleaned and cut into small pieces
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 bell pepper, diced
  • 2 tomatoes, chopped
  • 1 carrot, sliced
  • 1 celery stalk, chopped
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 bay leaf
  • 6 cups beef broth
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and bell pepper, and cook until the vegetables are softened.
  2. Add the beef tripe to the pot and cook for 5 minutes, stirring occasionally.
  3. Stir in the tomatoes, carrot, celery, oregano, cumin, and bay leaf. Cook for another 5 minutes.
  4. Pour in the beef broth and bring the soup to a boil. Reduce the heat to low, cover the pot, and simmer for 2 hours or until the tripe is tender.
  5. Season the soup with salt and pepper to taste.
  6. Serve the tripe soup hot and enjoy!
