Tripe Soup (sopa De Mondongo)
Tripe Soup, known as Sopa de Mondongo, is a traditional Venezuelan dish that is hearty, flavorful, and perfect for a comforting meal. This soup is made with beef tripe, vegetables, and a delicious broth that is sure to warm you up on a chilly day.
Ingredients
- 2 lbs beef tripe, cleaned and cut into small pieces
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 1 carrot, sliced
- 1 celery stalk, chopped
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 bay leaf
- 6 cups beef broth
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and bell pepper, and cook until the vegetables are softened.
- Add the beef tripe to the pot and cook for 5 minutes, stirring occasionally.
- Stir in the tomatoes, carrot, celery, oregano, cumin, and bay leaf. Cook for another 5 minutes.
- Pour in the beef broth and bring the soup to a boil. Reduce the heat to low, cover the pot, and simmer for 2 hours or until the tripe is tender.
- Season the soup with salt and pepper to taste.
- Serve the tripe soup hot and enjoy!
