Ingredients

  • 1 kg tripe, cleaned and cut into small pieces

  • 2 tbsp paprika
  • 1 tsp cumin
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 2 cups beef broth

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and cook until softened.
  2. Add the tripe to the pot and cook until browned.
  3. Stir in the tomatoes, red bell peppers, and garlic. Cook for a few minutes until the vegetables start to soften.
  4. Add the paprika, cumin, thyme, bay leaf, salt, and pepper. Stir to combine.
  5. Pour in the beef broth and bring the stew to a simmer. Reduce the heat to low, cover the pot, and let it cook for 2 hours, stirring occasionally.
  6. Once the tripe is tender and the flavors have melded, remove the bay leaf and adjust the seasoning if needed.
