Ingredients
- 1 kg tripe, cleaned and cut into small pieces
- 2 onions, finely chopped
- 3 tomatoes, diced
- 3 red bell peppers, sliced
- 4 cloves garlic, minced
- 2 tbsp paprika
- 1 tsp cumin
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 2 cups beef broth
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and cook until softened.
- Add the tripe to the pot and cook until browned.
- Stir in the tomatoes, red bell peppers, and garlic. Cook for a few minutes until the vegetables start to soften.
- Add the paprika, cumin, thyme, bay leaf, salt, and pepper. Stir to combine.
- Pour in the beef broth and bring the stew to a simmer. Reduce the heat to low, cover the pot, and let it cook for 2 hours, stirring occasionally.
- Once the tripe is tender and the flavors have melded, remove the bay leaf and adjust the seasoning if needed.
- Serve the tripe stew hot, garnished with fresh herbs if desired.
