Ingredients

- 1/2 tsp dried thyme

Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the tripe to the pot and cook until browned on all sides.

- Sprinkle the paprika, cumin, and thyme over the mixture, and stir to combine.
- Pour in the white wine and beef broth. Season with salt and pepper.
- Reduce the heat to low, cover the pot, and simmer for 2 hours, or until the tripe is tender.
- Adjust the seasoning if needed, and serve the tripe stew hot.
