Ingredients
- 2 lbs beef tripe, cleaned and cut into strips

- 1 bottle dry white wine
- 4 cups beef broth
- 1/4 cup all-purpose flour
- 4 tbsp butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the onion, carrots, and garlic. Cook until the vegetables are soft.
- Sprinkle the flour over the vegetables and stir to combine. Cook for 2 minutes to make a roux.
- Add the tripe to the pot and pour in the white wine. Let it simmer for 10 minutes.
- Pour in the beef broth and add the bouquet garni. Season with salt and pepper. Cover and simmer for 2.5 hours, stirring occasionally.
