Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion, carrots, and garlic. Cook until the vegetables are soft.
  2. Sprinkle the flour over the vegetables and stir to combine. Cook for 2 minutes to make a roux.
  3. Add the tripe to the pot and pour in the white wine. Let it simmer for 10 minutes.
  4. Pour in the beef broth and add the bouquet garni. Season with salt and pepper. Cover and simmer for 2.5 hours, stirring occasionally.
