Ingredients

  • 1 cup heavy cream
  • 1 cup mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1/2 cup raspberry jam
  • 24 ladyfinger cookies
  • 1/2 cup fresh raspberries
  • 2 tablespoons lemon curd

Instructions

  1. In a large bowl, whip the heavy cream until stiff peaks form.
  2. In another bowl, whisk together the mascarpone cheese, powdered sugar, vanilla extract, lemon zest, and lemon juice until smooth.
  3. Gently fold the whipped cream into the mascarpone mixture until well combined.
  4. Spread a thin layer of raspberry jam on the bottom of a 9x9 inch dish.
  5. Dip each ladyfinger cookie into the raspberry jam and arrange a layer of dipped cookies in the dish.
  6. Spread half of the mascarpone mixture over the cookies.
  7. Repeat the layers with the remaining raspberry jam, cookies, and mascarpone mixture.
  8. Chill the tiramisu in the refrigerator for at least 4 hours, or overnight, to set.
