- 2 ripe bananas, mashed
- 1 ripe mango, diced
- 1/2 cup coconut oil
- 1/2 cup brown sugar
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, combine the mashed bananas, diced mango, coconut oil, and brown sugar.
- Sift in the flour, baking soda, and salt. Stir until just combined.
- Stir in the vanilla extract.
- Pour the batter into the prepared loaf pan.
- Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
