Ingredients
- 1 lb chicken breast, cut into cubes
- 2 tbsp coconut oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 cup diced pineapple
- 1 can (14 oz) coconut milk
- 2 tbsp curry powder
- 1 tsp turmeric
- Salt and pepper to taste
- 2 cups cooked white rice
Instructions
- In a large pot, heat the coconut oil over medium heat. Add the onion and garlic, and sauté until fragrant.
- Add the chicken cubes to the pot and cook until browned on all sides.
- Stir in the curry powder and turmeric, then add the red bell pepper and pineapple. Cook for a few minutes until the vegetables begin to soften.
- Pour in the coconut milk and bring the mixture to a simmer. Let it cook for 20-25 minutes, or until the chicken is fully cooked and the flavors have melded together.
- Season with salt and pepper to taste.
- Serve the tropical coconut curry over cooked white rice.
