Tropical Coconut Lime Bars

Ingredients
- 1 1/2 cups shredded coconut
- 1 1/2 cups almond flour
- 1/2 cup coconut oil, melted
- 1/4 cup maple syrup
- 1/4 cup lime juice
- 2 tbsp lime zest
- 1/4 tsp salt
- 1/2 cup coconut cream
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8x8 inch baking dish.
- In a bowl, combine the shredded coconut, almond flour, melted coconut oil, maple syrup, lime juice, lime zest, and salt. Press the mixture into the bottom of the prepared baking dish.
- Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown. Allow to cool completely.
- In a separate bowl, whip the coconut cream and powdered sugar until smooth and creamy. Spread the coconut cream mixture over the cooled crust.
- Refrigerate for at least 2 hours to set. Once set, cut into bars and serve chilled.
