Tropical Coconut Lime Bars

Ingredients

  • 1 1/2 cups shredded coconut
  • 1 1/2 cups almond flour
  • 1/2 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1/4 cup lime juice
  • 2 tbsp lime zest
  • 1/4 tsp salt
  • 1/2 cup coconut cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8x8 inch baking dish.
  2. In a bowl, combine the shredded coconut, almond flour, melted coconut oil, maple syrup, lime juice, lime zest, and salt. Press the mixture into the bottom of the prepared baking dish.
  3. Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown. Allow to cool completely.
  4. In a separate bowl, whip the coconut cream and powdered sugar until smooth and creamy. Spread the coconut cream mixture over the cooled crust.
  5. Refrigerate for at least 2 hours to set. Once set, cut into bars and serve chilled.
