Ingredients

  • 1 lb mixed seafood (shrimp, squid, and fish)
  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red chili, finely chopped
  • 1 tbsp curry powder
  • 1 can (14 oz) coconut milk
  • 1 cup chicken or fish stock
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and red chili. Sauté until the onion is soft and translucent.
  2. Add the curry powder and cook for 1-2 minutes, stirring constantly to release the fragrance of the spices.
  3. Pour in the coconut milk and stock. Bring to a gentle simmer.
  4. Add the mixed seafood, fish sauce, and brown sugar. Simmer for 10-15 minutes until the seafood is cooked through.
  5. Stir in the lime juice and season with salt and pepper to taste.
  6. Serve the tropical paradise curry over steamed rice, garnished with fresh cilantro.
