Tropical Paradise Curry

Ingredients
- 1 lb mixed seafood (shrimp, squid, and fish)
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red chili, finely chopped
- 1 tbsp curry powder
- 1 can (14 oz) coconut milk
- 1 cup chicken or fish stock
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 lime, juiced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and red chili. Sauté until the onion is soft and translucent.
- Add the curry powder and cook for 1-2 minutes, stirring constantly to release the fragrance of the spices.
- Pour in the coconut milk and stock. Bring to a gentle simmer.
- Add the mixed seafood, fish sauce, and brown sugar. Simmer for 10-15 minutes until the seafood is cooked through.
- Stir in the lime juice and season with salt and pepper to taste.
- Serve the tropical paradise curry over steamed rice, garnished with fresh cilantro.
