Tropical Pineapple Fried Rice

Ingredients

  • 3 cups cooked rice
  • 1 cup fresh pineapple, diced
  • 1 red bell pepper, diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup frozen peas
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon curry powder
  • 1/4 cup chopped cilantro
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
  2. Add the beaten eggs and scramble until cooked through. Remove from the skillet and set aside.
  3. Heat the remaining oil in the skillet and sauté the onion and garlic until fragrant.
  4. Add the bell pepper, pineapple, and peas, and cook for 3-4 minutes.
  5. Stir in the cooked rice, soy sauce, and curry powder. Cook for an additional 3-4 minutes.
  6. Add the scrambled eggs back to the skillet and mix well with the rice.
  7. Season with salt and pepper, and garnish with chopped cilantro before serving.
