Tropical Pineapple Fried Rice

Ingredients
- 3 cups cooked rice
- 1 cup fresh pineapple, diced
- 1 red bell pepper, diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup frozen peas
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon curry powder
- 1/4 cup chopped cilantro
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
- Add the beaten eggs and scramble until cooked through. Remove from the skillet and set aside.
- Heat the remaining oil in the skillet and sauté the onion and garlic until fragrant.
- Add the bell pepper, pineapple, and peas, and cook for 3-4 minutes.
- Stir in the cooked rice, soy sauce, and curry powder. Cook for an additional 3-4 minutes.
- Add the scrambled eggs back to the skillet and mix well with the rice.
- Season with salt and pepper, and garnish with chopped cilantro before serving.
