Tropical Temptation (Thiébou Guinar Tiga)

Ingredients

  • 1 whole fish, cleaned and scaled
  • 2 cups of rice
  • 2 onions, sliced
  • 3 tomatoes, diced
  • 2 carrots, sliced
  • 1 eggplant, diced
  • 1 cabbage, chopped
  • 4 cloves of garlic, minced
  • 1 scotch bonnet pepper, whole
  • 1 cup of tomato paste
  • 1 cup of vegetable oil
  • 4 cups of water
  • Salt and pepper to taste

Instructions

  1. Season the fish with salt and pepper, then set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and tomato paste, and cook until the onions are soft and the tomato paste is fragrant.
  3. Add the tomatoes, carrots, eggplant, and cabbage to the pot. Stir well to combine all the ingredients.
  4. Add the fish to the pot, then pour in the water. Place the scotch bonnet pepper on top.
  5. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30 minutes.
  6. After 30 minutes, add the rice to the pot and gently stir to combine. Let it cook for an additional 20-25 minutes, or until the rice is tender and the fish is fully cooked.
  7. Once the rice is cooked, remove the pot from the heat and let it rest for a few minutes before serving.
