Tropical Temptation (Thiébou Guinar Tiga)
Thiébou Guinar Tiga, also known as Tropical Temptation, is a flavorful and aromatic Senegalese dish that combines fish, vegetables, and rice. This dish is a staple in Senegalese cuisine and is loved for its vibrant flavors and exotic ingredients.
Ingredients
- 1 whole fish, cleaned and scaled
- 2 cups of rice
- 2 onions, sliced
- 3 tomatoes, diced
- 2 carrots, sliced
- 1 eggplant, diced
- 1 cabbage, chopped
- 4 cloves of garlic, minced
- 1 scotch bonnet pepper, whole
- 1 cup of tomato paste
- 1 cup of vegetable oil
- 4 cups of water
- Salt and pepper to taste
Instructions
- Season the fish with salt and pepper, then set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and tomato paste, and cook until the onions are soft and the tomato paste is fragrant.
- Add the tomatoes, carrots, eggplant, and cabbage to the pot. Stir well to combine all the ingredients.
- Add the fish to the pot, then pour in the water. Place the scotch bonnet pepper on top.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30 minutes.
- After 30 minutes, add the rice to the pot and gently stir to combine. Let it cook for an additional 20-25 minutes, or until the rice is tender and the fish is fully cooked.
- Once the rice is cooked, remove the pot from the heat and let it rest for a few minutes before serving.
