Tropical Temptation (Thiébou Nébé)
Thiébou Nébé, also known as Tropical Temptation, is a traditional Senegalese dish that combines fish, rice, and black-eyed peas in a flavorful tomato-based sauce. This hearty and nutritious meal is a staple in Senegalese cuisine, and it's perfect for sharing with family and friends.
Ingredients
- 1 lb fish fillets
- 1 cup black-eyed peas
- 2 cups rice
- 1 onion, chopped
- 2 tomatoes, diced
- 1 bell pepper, sliced
- 3 garlic cloves, minced
- 1 scotch bonnet pepper, whole
- 1/4 cup tomato paste
- 1/4 cup vegetable oil
- 1 tsp thyme
- 1 tsp ground red pepper
- 1 tsp salt
- 4 cups water
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and bell pepper. Sauté until the onions are translucent.
- Add the diced tomatoes, tomato paste, thyme, ground red pepper, and salt. Cook for 5 minutes, stirring occasionally.
- Add the fish fillets to the pot and cook for 5 minutes on each side.
- Add the black-eyed peas, rice, scotch bonnet pepper, and water to the pot. Bring to a boil, then reduce the heat to low and simmer for 30 minutes, or until the rice and peas are tender.
- Remove the scotch bonnet pepper before serving. Enjoy your Thiébou Nébé!
