Tropical Temptation (Thiébou Nébé)

Ingredients

  • 1 lb fish fillets
  • 1 cup black-eyed peas
  • 2 cups rice
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 bell pepper, sliced
  • 3 garlic cloves, minced
  • 1 scotch bonnet pepper, whole
  • 1/4 cup tomato paste
  • 1/4 cup vegetable oil
  • 1 tsp thyme
  • 1 tsp ground red pepper
  • 1 tsp salt
  • 4 cups water

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and bell pepper. Sauté until the onions are translucent.
  2. Add the diced tomatoes, tomato paste, thyme, ground red pepper, and salt. Cook for 5 minutes, stirring occasionally.
  3. Add the fish fillets to the pot and cook for 5 minutes on each side.
  4. Add the black-eyed peas, rice, scotch bonnet pepper, and water to the pot. Bring to a boil, then reduce the heat to low and simmer for 30 minutes, or until the rice and peas are tender.
  5. Remove the scotch bonnet pepper before serving. Enjoy your Thiébou Nébé!
