Tropical Twist Gallo Pinto

Ingredients

  • 2 cups cooked white rice
  • 1 cup cooked black beans
  • 1/2 cup diced pineapple
  • 1/2 cup diced mango
  • 1/4 cup coconut milk
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat.
  2. Add the diced red bell pepper, red onion, and garlic. Sauté for 3-4 minutes until the vegetables are softened.
  3. Stir in the cooked rice and black beans. Cook for 5 minutes, stirring occasionally.
  4. Add the diced pineapple, mango, coconut milk, and cumin. Stir to combine and cook for an additional 5 minutes.
