Tropical Twist Gallo Pinto
Gallo Pinto is a traditional Nicaraguan dish made with rice and beans. This recipe adds a tropical twist to the classic dish by incorporating fresh fruits and coconut milk.
Ingredients
- 2 cups cooked white rice
- 1 cup cooked black beans
- 1/2 cup diced pineapple
- 1/2 cup diced mango
- 1/4 cup coconut milk
- 1/4 cup diced red bell pepper
- 1/4 cup diced red onion
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large skillet, heat the vegetable oil over medium heat.
- Add the diced red bell pepper, red onion, and garlic. Sauté for 3-4 minutes until the vegetables are softened.
- Stir in the cooked rice and black beans. Cook for 5 minutes, stirring occasionally.
- Add the diced pineapple, mango, coconut milk, and cumin. Stir to combine and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
