Ingredients
- 8 oz (225g) high-quality dark chocolate, chopped
- 1/2 cup (120ml) heavy cream
- 2 tablespoons (30ml) extra virgin olive oil
- 1/4 cup (30g) unsweetened cocoa powder, for rolling
Instructions
- In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
- Place the chopped chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for 1 minute to soften the chocolate.
- Stir the chocolate and cream together until smooth and glossy. Add the olive oil and stir until fully incorporated.
- Cover the bowl with plastic wrap and refrigerate for 2 hours, or until the mixture is firm enough to scoop.
- Using a small spoon or melon baller, scoop out small portions of the chocolate mixture and roll them into balls using your hands.
- Roll the truffles in the cocoa powder until evenly coated.
- Store the truffles in an airtight container in the refrigerator until ready to serve.
