Ingredients

  • 8 oz (225g) high-quality dark chocolate, chopped
  • 1/2 cup (120ml) heavy cream
  • 2 tablespoons (30ml) extra virgin olive oil
  • 1/4 cup (30g) unsweetened cocoa powder, for rolling

Instructions

  1. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
  2. Place the chopped chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for 1 minute to soften the chocolate.
  3. Stir the chocolate and cream together until smooth and glossy. Add the olive oil and stir until fully incorporated.
  4. Cover the bowl with plastic wrap and refrigerate for 2 hours, or until the mixture is firm enough to scoop.
  5. Using a small spoon or melon baller, scoop out small portions of the chocolate mixture and roll them into balls using your hands.
  6. Roll the truffles in the cocoa powder until evenly coated.
  7. Store the truffles in an airtight container in the refrigerator until ready to serve.
