Ingredients
- 200g dark chocolate, finely chopped
- 1/2 cup heavy cream
- 2 tbsp unsalted butter

Instructions
- In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
- Place the chopped chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for 1 minute to soften the chocolate.
- Gently stir the mixture with a spatula until the chocolate is completely melted and the mixture is smooth.
- Add the butter and vanilla extract, stirring until the butter is melted and fully incorporated.
- Cover the bowl and refrigerate the mixture for 2 hours, or until it is firm enough to scoop.
- Using a small spoon or melon baller, scoop out small portions of the chocolate mixture and roll them into balls using your hands.
- Roll the truffles in cocoa powder to coat evenly.
- Place the truffles in mini cupcake liners for serving.
