Ingredients

  • 3 cups cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large pan over medium heat.
  2. Add the chopped onions and minced garlic, and sauté until the onions are translucent.
  3. Add the diced bell pepper and mixed vegetables to the pan, and cook until the vegetables are tender.
  4. Stir in the cumin, turmeric, and paprika, and cook for an additional 2 minutes.
  5. Add the cooked rice to the pan, and stir to combine with the vegetables and spices. Cook for 5-7 minutes, or until the rice is heated through.
  6. Season with salt and pepper to taste.
  7. Remove from heat and serve the Tsebhi Birsen hot.
