Tsebhi Selen (eritrean Style Vegetable Curry)

Ingredients

  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 large carrots, diced
  • 2 potatoes, peeled and diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup cabbage, shredded
  • 1 cup tomatoes, chopped
  • 2 tbsp tomato paste
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional)
  • Salt to taste
  • 3 cups vegetable broth
  • 2 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onions and garlic, and sauté until the onions are soft and translucent.
  2. Add the carrots, potatoes, green beans, and cabbage to the pot. Cook for 5 minutes, stirring occasionally.
  3. Stir in the tomatoes, tomato paste, turmeric, cumin, paprika, cayenne pepper (if using), and salt. Cook for another 5 minutes.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the vegetables are tender.
  5. Adjust the seasoning if needed, and serve the Tsebhi Selen hot with injera or rice.
