Tsebhi Selen (eritrean Style Vegetable Curry)

Ingredients
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 large carrots, diced
- 2 potatoes, peeled and diced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 cup cabbage, shredded
- 1 cup tomatoes, chopped
- 2 tbsp tomato paste
- 1 tsp turmeric
- 1 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional)
- Salt to taste
- 3 cups vegetable broth
- 2 tbsp olive oil
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onions and garlic, and sauté until the onions are soft and translucent.
- Add the carrots, potatoes, green beans, and cabbage to the pot. Cook for 5 minutes, stirring occasionally.
- Stir in the tomatoes, tomato paste, turmeric, cumin, paprika, cayenne pepper (if using), and salt. Cook for another 5 minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the vegetables are tender.
- Adjust the seasoning if needed, and serve the Tsebhi Selen hot with injera or rice.
