Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 carrots, julienned
  • 1 bell pepper, thinly sliced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup cabbage, shredded
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 4 slices of bread, toasted and cut into cubes

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  3. Add the carrots, bell pepper, green beans, and cabbage. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
  4. Season with cumin, paprika, turmeric, salt, and pepper. Mix well to combine.
  5. Add the toasted bread cubes and stir-fry for an additional 2-3 minutes.
  6. Remove from heat and serve hot.
