Ingredients
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2 carrots, julienned
- 1 bell pepper, thinly sliced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 cup cabbage, shredded
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 4 slices of bread, toasted and cut into cubes
Instructions
- Heat olive oil in a large pan over medium heat.
- Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Add the carrots, bell pepper, green beans, and cabbage. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
- Season with cumin, paprika, turmeric, salt, and pepper. Mix well to combine.
- Add the toasted bread cubes and stir-fry for an additional 2-3 minutes.
- Remove from heat and serve hot.
