Tsebhi Siga (eritrean Beef Stir-fry)

Ingredients

  • 1 lb beef, thinly sliced
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
  3. Add the beef slices to the pan and cook until browned on all sides.
  4. Stir in the tomatoes, turmeric, cumin, paprika, cinnamon, and cardamom. Season with salt and pepper.
  5. Cover the pan and simmer for 30 minutes, stirring occasionally.
  6. Once the beef is tender and the sauce has thickened, remove from heat.
  7. Serve the Tsebhi Siga with injera or rice.
