Ingredients

  • 1 kg chicken thighs, bone-in and skin-on
  • 2 large onions, thinly sliced
  • 4 garlic cloves, minced
  • 4 large potatoes, peeled and cut into chunks
  • 2 large tomatoes, chopped
  • 1 cup chicken broth
  • 1/2 cup dry white wine
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt, pepper, and dried oregano.
  2. In a large pot, heat the olive oil over medium-high heat. Add the chicken thighs and cook until browned on all sides. Remove the chicken and set aside.
  3. Add the sliced onions to the pot and cook until softened. Add the minced garlic and cook for another minute.
  4. Return the chicken to the pot and add the potatoes, tomatoes, chicken broth, and white wine. Bring to a simmer, then reduce the heat to low, cover, and cook for 1 hour or until the chicken is tender and the potatoes are cooked through.
  5. Adjust the seasoning with salt and pepper, if needed. Serve hot and enjoy!
