Tteokbokki Pizza (떡볶이)

Ingredients
- 1 cup of tteokbokki rice cakes
- 1/2 cup of gochujang (Korean red chili paste)
- 1/4 cup of sugar
- 1 tablespoon of soy sauce
- 1/2 cup of water
- 1 cup of mozzarella cheese
- 1/4 cup of chopped scallions
- 1 pre-made pizza dough
Instructions
- Prepare the tteokbokki sauce by combining gochujang, sugar, soy sauce, and water in a saucepan. Cook over medium heat until the sauce thickens.
- Add the tteokbokki rice cakes to the sauce and simmer for 5-7 minutes until the rice cakes are tender.
- Preheat the oven to 425°F (220°C).
- Roll out the pizza dough on a baking sheet and spread the tteokbokki sauce and rice cakes evenly over the dough.
- Sprinkle mozzarella cheese on top and add chopped scallions.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is melted and bubbly.
- Slice the Tteokbokki Pizza and serve hot.
