Tteokbokki Spicy Rice Cakes (떡볶이)

Ingredients

  • 1 pound (450g) cylinder-shaped rice cakes
  • 4 cups water
  • 5-6 large dried anchovies, head and black innards removed
  • 6 x 8-inch dried kelp
  • ½ onion, sliced
  • 1 cup fish cakes, sliced
  • 2 tablespoons gochujang (Korean red chili pepper paste)
  • 1 tablespoon sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon minced garlic
  • 1 tablespoon gochugaru (Korean red chili pepper flakes)
  • Salt to taste
  • 2 green onions, cut into 2-inch pieces

Instructions

  1. In a large pan, combine water, dried anchovies, and dried kelp. Bring to a boil over medium-high heat for 15 minutes to create anchovy stock. Remove the anchovies and kelp from the stock.
  2. Add the sliced onion, fish cakes, gochujang, sugar, soy sauce, and minced garlic to the anchovy stock. Stir well and bring to a boil.
  3. Add the rice cakes and simmer for 8-10 minutes, or until the rice cakes are soft and the sauce has thickened.
  4. Add the gochugaru and salt to taste. Stir well to combine.
  5. Add the green onions and cook for an additional 2 minutes.
  6. Serve hot and enjoy!
