Tteokbokki Spicy Rice Cakes (떡볶이)
떡볶이 (Tteokbokki) is a popular Korean street food made with chewy rice cakes, fish cakes, and a spicy, sweet, and savory sauce. It's a beloved comfort food that's perfect for satisfying spicy cravings.
Ingredients
- 1 pound (450g) cylinder-shaped rice cakes
- 4 cups water
- 5-6 large dried anchovies, head and black innards removed
- 6 x 8-inch dried kelp
- ½ onion, sliced
- 1 cup fish cakes, sliced
- 2 tablespoons gochujang (Korean red chili pepper paste)
- 1 tablespoon sugar
- 1 tablespoon soy sauce
- 1 teaspoon minced garlic
- 1 tablespoon gochugaru (Korean red chili pepper flakes)
- Salt to taste
- 2 green onions, cut into 2-inch pieces
Instructions
- In a large pan, combine water, dried anchovies, and dried kelp. Bring to a boil over medium-high heat for 15 minutes to create anchovy stock. Remove the anchovies and kelp from the stock.
- Add the sliced onion, fish cakes, gochujang, sugar, soy sauce, and minced garlic to the anchovy stock. Stir well and bring to a boil.
- Add the rice cakes and simmer for 8-10 minutes, or until the rice cakes are soft and the sauce has thickened.
- Add the gochugaru and salt to taste. Stir well to combine.
- Add the green onions and cook for an additional 2 minutes.
- Serve hot and enjoy!
