Tudou Shurpa is a hearty and comforting beef and potato stew that originates from the Uyghur cuisine of Xinjiang, China. This dish is known for its rich flavors and warming spices, making it a perfect choice for a cozy meal.
Ingredients
- 1 lb beef, cut into cubes
- 2 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 2 carrots, sliced
- 1 red bell pepper, chopped
- 4 cups beef broth
- 2 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
- Add the diced tomatoes, cumin, paprika, turmeric, salt, and pepper. Cook for a few minutes until the tomatoes start to break down.
- Return the browned beef to the pot. Add the diced potatoes, sliced carrots, and chopped red bell pepper. Pour in the beef broth and bring the stew to a boil.
- Reduce the heat to low, cover the pot, and simmer for about 1 hour or until the beef and vegetables are tender.
- Adjust the seasoning if needed. Serve the Tudou Shurpa hot, garnished with fresh cilantro.
