Ingredients

  • 1 lb beef, cut into cubes
  • 2 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 carrots, sliced
  • 1 red bell pepper, chopped
  • 4 cups beef broth
  • 2 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.
  2. In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
  3. Add the diced tomatoes, cumin, paprika, turmeric, salt, and pepper. Cook for a few minutes until the tomatoes start to break down.
  4. Return the browned beef to the pot. Add the diced potatoes, sliced carrots, and chopped red bell pepper. Pour in the beef broth and bring the stew to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for about 1 hour or until the beef and vegetables are tender.
  6. Adjust the seasoning if needed. Serve the Tudou Shurpa hot, garnished with fresh cilantro.
