Ingredients

  • 4 bone-in chicken thighs
  • 1 cup coconut milk
  • 2 shallots, finely chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 red chilies, sliced
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 tablespoon tamarind paste
  • Salt to taste
  • 2 tablespoons cooking oil

Instructions

  1. Preheat the grill to medium-high heat. Season the chicken thighs with salt and grill until cooked through, about 20-25 minutes.
  2. In a separate pan, heat the cooking oil over medium heat. Add the shallots, garlic, ginger, and red chilies. Sauté until fragrant.
  3. Stir in the turmeric powder and coriander powder, then pour in the coconut milk and tamarind paste. Simmer for 10 minutes, stirring occasionally.
  4. Once the chicken is grilled, transfer it to the pan with the coconut gravy. Simmer for an additional 5 minutes to allow the flavors to meld together.
  5. Adjust the seasoning with salt, if needed. Serve the Tuktuk hot with steamed rice.
