Tuktuk (grilled Chicken In Spicy Coconut Gravy)

Ingredients
- 4 bone-in chicken thighs
- 1 cup coconut milk
- 2 shallots, finely chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 red chilies, sliced
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 tablespoon tamarind paste
- Salt to taste
- 2 tablespoons cooking oil
Instructions
- Preheat the grill to medium-high heat. Season the chicken thighs with salt and grill until cooked through, about 20-25 minutes.
- In a separate pan, heat the cooking oil over medium heat. Add the shallots, garlic, ginger, and red chilies. Sauté until fragrant.
- Stir in the turmeric powder and coriander powder, then pour in the coconut milk and tamarind paste. Simmer for 10 minutes, stirring occasionally.
- Once the chicken is grilled, transfer it to the pan with the coconut gravy. Simmer for an additional 5 minutes to allow the flavors to meld together.
- Adjust the seasoning with salt, if needed. Serve the Tuktuk hot with steamed rice.
