Ingredients

  • 4 chicken thighs
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 red chili, sliced
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp salt
  • 1/2 cup coconut milk
  • 2 tbsp cooking oil

Instructions

  1. Season the chicken thighs with salt and turmeric powder.
  2. Heat the cooking oil in a pan over medium heat.
  3. Add the seasoned chicken thighs and cook until golden brown on both sides, then set aside.
  4. In the same pan, sauté the onion, garlic, and red chili until fragrant.
  5. Add the tomatoes, coriander powder, and cumin powder, and cook until the tomatoes are soft.
  6. Pour in the coconut milk and simmer for 5 minutes.
  7. Return the grilled chicken to the pan and coat it with the spicy tomato sauce.
  8. Serve the Tuktuk hot with steamed rice.
