Ingredients

  • 1 lb fresh tuna, cut into chunks
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 can (14 oz) coconut milk
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 2 cups cooked white rice, for serving

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
  2. Add the tuna chunks to the pot and cook until they are lightly browned on all sides.
  3. Stir in the curry powder, turmeric, cumin, paprika, salt, and black pepper, coating the tuna and onions with the spices.
