Tuna Cakes with Avocado Sauce (Pastelitos de Atún con Salsa de Aguacate)

Ingredients

  • 2 cans of tuna, drained
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped red bell pepper
  • 2 eggs
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 ripe avocado
  • 1/4 cup plain Greek yogurt
  • 1 clove garlic, minced
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • 2 tablespoons chopped cilantro

Instructions

  1. In a large bowl, combine the drained tuna, breadcrumbs, chopped onion, chopped red bell pepper, eggs, cumin, paprika, salt, and pepper. Mix until well combined.
  2. Form the tuna mixture into small patties and place them on a plate.
  3. Heat a non-stick skillet over medium heat and cook the tuna cakes for 3-4 minutes on each side, or until golden brown and cooked through.
  4. While the tuna cakes are cooking, prepare the avocado sauce. In a blender or food processor, combine the ripe avocado, Greek yogurt, minced garlic, lime juice, salt, pepper, and chopped cilantro. Blend until smooth and creamy.
  5. Serve the tuna cakes with the creamy avocado sauce on the side.
