Ingredients
- 2 cans of tuna, drained
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped red bell pepper
- 2 eggs
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 ripe avocado
- 1/4 cup plain Greek yogurt
- 1 clove garlic, minced
- 2 tablespoons lime juice
- Salt and pepper to taste
- 2 tablespoons chopped cilantro
Instructions
- In a large bowl, combine the drained tuna, breadcrumbs, chopped onion, chopped red bell pepper, eggs, cumin, paprika, salt, and pepper. Mix until well combined.
- Form the tuna mixture into small patties and place them on a plate.
- Heat a non-stick skillet over medium heat and cook the tuna cakes for 3-4 minutes on each side, or until golden brown and cooked through.
- While the tuna cakes are cooking, prepare the avocado sauce. In a blender or food processor, combine the ripe avocado, Greek yogurt, minced garlic, lime juice, salt, pepper, and chopped cilantro. Blend until smooth and creamy.
- Serve the tuna cakes with the creamy avocado sauce on the side.
