Tuna Empanada (Empanada de Atún)

Ingredients

  • 2 cans of tuna, drained
  • 1 onion, finely chopped
  • 2 hard-boiled eggs, chopped
  • 1/2 cup pitted green olives, sliced
  • 1/4 cup raisins
  • 1/4 cup tomato sauce
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 sheets of store-bought puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, mix the tuna, onion, hard-boiled eggs, olives, raisins, tomato sauce, paprika, salt, and pepper.
  2. Preheat the oven to 375°F (190°C).
  3. Roll out one sheet of puff pastry and place it on a baking sheet lined with parchment paper.
  4. Spoon the tuna mixture onto the pastry, leaving a border around the edges.
  5. Place the second sheet of puff pastry on top and crimp the edges to seal the empanada.
  6. Brush the top with the beaten egg to create a golden crust.
  7. Make a few small slits on the top to allow steam to escape.
  8. Bake for 30-35 minutes, or until the pastry is golden brown.
  9. Let it cool for a few minutes before slicing and serving.
