Ingredients
- 1 lb fresh tuna, cut into 1-inch cubes
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tsp baking powder
- 1 cup ice-cold water
- Oil for frying
- Salt and pepper to taste
Instructions
- In a bowl, mix the all-purpose flour, cornstarch, baking powder, and a pinch of salt.
- Slowly add the ice-cold water to the dry ingredients, stirring until just combined. It's okay if the batter is a bit lumpy.
- Heat the oil in a deep pan or pot over medium-high heat.
- Dip the tuna cubes into the batter, allowing any excess to drip off, and carefully place them in the hot oil.
- Fry the tuna cubes in batches for 2-3 minutes, or until the tempura coating is golden and crispy.
- Remove the tuna tempura from the oil and place them on a plate lined with paper towels to drain any excess oil.
- Season with salt and pepper to taste before serving.
