Tungrymbai Aloo Bhaja (manipuri Style Fermented Soybean Stir-fry)

Ingredients

  • 1 cup fermented soybeans (tungrymbai)
  • 2 large potatoes, thinly sliced
  • 2-3 green chilies, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon mustard oil
  • Salt to taste

Instructions

  1. Heat mustard oil in a pan over medium heat.
  2. Add the thinly sliced potatoes and stir-fry until they are golden and crispy. Remove and set aside.
  3. In the same pan, add the fermented soybeans and green chilies. Stir-fry for a few minutes.
  4. Add turmeric powder and salt. Mix well.
  5. Return the stir-fried potatoes to the pan and toss everything together.
  6. Cook for another 2-3 minutes, then remove from heat.
  7. Serve hot as a side dish.
