Tunisian Mloukhia Stew With Rabbit And Okra

Ingredients

  • 1 whole rabbit, cut into pieces
  • 1 cup mloukhia leaves (dried jute leaves)
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 cup okra, trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 cups chicken or vegetable broth

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the rabbit pieces and brown them on all sides. Remove the rabbit from the pot and set aside.
  2. In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. Add the diced tomatoes, ground coriander, ground cumin, paprika, salt, and pepper. Cook for a few minutes until the tomatoes start to break down.
  4. Pour in the chicken or vegetable broth and bring the mixture to a simmer.
  5. Add the browned rabbit pieces back into the pot. Cover and let it simmer for 30 minutes.
  6. After 30 minutes, add the mloukhia leaves and okra to the pot. Simmer for an additional 20 minutes until the rabbit is tender and the mloukhia leaves have thickened the stew.
