Tunisian Shakshuka With Poached Eggs

Ingredients
- 1/4 cup olive oil
- 1 onion, finely chopped
- 3 bell peppers, diced
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 can (28 ounces) crushed tomatoes
- Salt and pepper to taste
- 8 large eggs
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and diced bell peppers, and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, paprika, and cayenne pepper, and cook for an additional 2 minutes.
- Pour in the crushed tomatoes and season with salt and pepper. Simmer for 10 minutes, stirring occasionally.
- Using a spoon, create 8 wells in the tomato and pepper mixture. Crack an egg into each well.
- Cover the skillet and cook until the egg whites are set but the yolks are still runny, about 5-7 minutes.
- Garnish with chopped parsley and serve hot.
