Ingredients
- 2 cups corn flour
- 4 cups water
- 1 onion, chopped
- 2 tomatoes, diced
- 1 lb chicken, cut into pieces
- 1 tsp ginger, minced
- 1 tsp garlic, minced
- 1 tsp paprika
- 1 tsp cayenne pepper
- Salt to taste
Instructions
- In a large pot, bring 4 cups of water to a boil.
- Gradually add the corn flour to the boiling water, stirring continuously to prevent lumps.
- Cover the pot and let the mixture simmer for 20-25 minutes, stirring occasionally, until it thickens into a smooth, soft dough.
- In a separate pot, heat some oil and sauté the onions, tomatoes, ginger, and garlic until fragrant.
- Add the chicken pieces to the pot and season with paprika, cayenne pepper, and salt. Cook until the chicken is browned and cooked through.
- Serve the Tuo Zaafi with the chicken stew on top, and enjoy!
