Turkey Ham

Ingredients

  • 1 pound of turkey breast
  • 1/4 cup of kosher salt
  • 1/4 cup of brown sugar
  • 1 tablespoon of pink curing salt
  • 1 teaspoon of black peppercorns
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder

Instructions

  1. In a large pot, combine the kosher salt, brown sugar, pink curing salt, black peppercorns, garlic powder, and onion powder with 4 cups of water. Bring to a boil, then remove from heat and let it cool to room temperature.
  2. Add the turkey breast to the brine, making sure it is fully submerged. Cover and refrigerate for 24 hours.
  3. After 24 hours, remove the turkey breast from the brine and rinse it under cold water. Pat dry with paper towels.
  4. Preheat your stovetop to medium heat. Place the turkey breast in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 2 hours, or until the internal temperature reaches 165°F.
  5. Once cooked, remove the turkey ham from the pot and let it rest for 10 minutes before slicing and serving.
