Turkey Ham

Ingredients
- 1 pound of turkey breast
- 1/4 cup of kosher salt
- 1/4 cup of brown sugar
- 1 tablespoon of pink curing salt
- 1 teaspoon of black peppercorns
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
Instructions
- In a large pot, combine the kosher salt, brown sugar, pink curing salt, black peppercorns, garlic powder, and onion powder with 4 cups of water. Bring to a boil, then remove from heat and let it cool to room temperature.
- Add the turkey breast to the brine, making sure it is fully submerged. Cover and refrigerate for 24 hours.
- After 24 hours, remove the turkey breast from the brine and rinse it under cold water. Pat dry with paper towels.
- Preheat your stovetop to medium heat. Place the turkey breast in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 2 hours, or until the internal temperature reaches 165°F.
- Once cooked, remove the turkey ham from the pot and let it rest for 10 minutes before slicing and serving.
