Turkish Delight Truffles (Lokum Trüf)

Ingredients

  • 1 cup powdered sugar
  • 1/2 cup cornstarch
  • 1 1/2 cups water
  • 1/4 cup lemon juice
  • 2 tablespoons rose water
  • 1 cup semisweet chocolate chips
  • 1/2 cup heavy cream
  • 1/4 cup unsweetened cocoa powder

Instructions

  1. In a saucepan, combine the powdered sugar, cornstarch, water, and lemon juice. Cook over medium heat, stirring constantly, until the mixture thickens and becomes translucent.
  2. Remove the mixture from the heat and stir in the rose water. Pour the mixture into a greased pan and let it cool and set for at least 3 hours.
  3. Once the Turkish delight has set, cut it into small squares.
  4. In a separate saucepan, heat the heavy cream until it just begins to boil. Remove from the heat and add the chocolate chips. Let it sit for a minute, then stir until smooth.
  5. Using a fork or candy dipper, dip the Turkish delight squares into the chocolate mixture, coating them completely. Place the coated squares on a parchment-lined baking sheet.
  6. Refrigerate the truffles for at least 30 minutes to allow the chocolate to set.
  7. Once set, roll the truffles in unsweetened cocoa powder to coat them evenly.
  8. Store the truffles in an airtight container in the refrigerator until ready to serve.
