Ingredients
- 4 chicken thighs
- 2 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced

- 1 tsp paprika

- 1/2 tsp ground turmeric
- Salt and pepper to taste
- 1 cup chicken broth
- 2 tomatoes, diced
- Fresh cilantro for garnish
Instructions
- Season the chicken thighs with salt, pepper, cumin, paprika, coriander, and turmeric.
- Heat olive oil in a large skillet over medium heat. Add the seasoned chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
- Pour in the chicken broth and add the diced tomatoes. Return the chicken thighs to the skillet.
- Simmer the chicken in the broth for 25-30 minutes, or until the chicken is cooked through and the sauce has thickened.
- Garnish with fresh cilantro before serving.
