Instructions

  1. Season the chicken thighs with salt, pepper, cumin, paprika, coriander, and turmeric.
  2. Heat olive oil in a large skillet over medium heat. Add the seasoned chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
  4. Pour in the chicken broth and add the diced tomatoes. Return the chicken thighs to the skillet.
  5. Simmer the chicken in the broth for 25-30 minutes, or until the chicken is cooked through and the sauce has thickened.
  6. Garnish with fresh cilantro before serving.
