Turkmenistan Eggplant Casserole (Turkmenistan Patlıcan Güveç)

Ingredients

  • 2 large eggplants, sliced
  • 1 lb ground lamb or beef
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sprinkle the eggplant slices with salt and let them sit for 15 minutes to release excess moisture. Pat dry with paper towels.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground lamb or beef and cook until browned. Remove from the skillet and set aside.
  4. In the same skillet, add the remaining olive oil and sauté the onion and garlic until softened.
  5. Add the diced tomatoes, paprika, cumin, cinnamon, salt, and pepper. Cook for 5 minutes, then stir in the cooked meat and chopped parsley.
  6. In a greased casserole dish, layer the eggplant slices and the meat mixture, finishing with a layer of eggplant on top.
  7. Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes until the top is golden brown.
  8. Let the casserole rest for 10 minutes before serving.
