Turkmenistan Lamb and Eggplant Curry (Turkmenistan Kuzu ve Patlıcan Körü)

Ingredients

  • 500g lamb, cut into cubes
  • 2 large eggplants, diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1 cup tomato puree
  • 1 cup chicken or vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened.
  2. Add the minced garlic, ground cumin, coriander, turmeric, paprika, and cayenne pepper to the pot. Stir and cook for 1-2 minutes until fragrant.
  3. Add the cubed lamb to the pot and brown on all sides.
  4. Stir in the tomato puree and broth. Season with salt and pepper. Bring to a simmer, then reduce the heat, cover, and cook for 45 minutes.
  5. Add the diced eggplant to the pot and continue to cook for an additional 15 minutes, or until the lamb is tender and the eggplant is soft.
  6. Adjust the seasoning if needed and serve the Turkmenistan Kuzu ve Patlıcan Körü hot with rice or bread.
