Ingredients
- 500g lamb, cut into cubes
- 2 large eggplants, diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 1 cup tomato puree
- 1 cup chicken or vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, ground cumin, coriander, turmeric, paprika, and cayenne pepper to the pot. Stir and cook for 1-2 minutes until fragrant.
- Add the cubed lamb to the pot and brown on all sides.
- Stir in the tomato puree and broth. Season with salt and pepper. Bring to a simmer, then reduce the heat, cover, and cook for 45 minutes.
- Add the diced eggplant to the pot and continue to cook for an additional 15 minutes, or until the lamb is tender and the eggplant is soft.
- Adjust the seasoning if needed and serve the Turkmenistan Kuzu ve Patlıcan Körü hot with rice or bread.
