Ingredients
- 500g lamb, cubed
- 4 potatoes, peeled and sliced
- 2 onions, chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup vegetable oil
- 1 cup water
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the lamb cubes and brown on all sides.
- Add the onions and garlic, and cook until softened.
- Stir in the paprika, cumin, salt, and black pepper.
- Add the tomatoes and cook for 5 minutes.
- Layer the sliced potatoes over the lamb mixture.
- Pour in the water, cover, and simmer for 1.5 hours, or until the lamb is tender.
- Preheat the oven to 180°C (350°F).
- Transfer the lamb and potato mixture to a casserole dish and bake for 30 minutes, or until the potatoes are golden brown.
- Serve hot and enjoy!
