Ingredients
- 1 kg lamb, cut into cubes
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, diced
- 2 potatoes, peeled and cubed
- 1 cup plain yogurt
- 2 tablespoons vegetable oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
- Add the lamb cubes to the pot and brown them on all sides.
- Stir in the diced tomatoes, cumin, coriander, turmeric, paprika, cayenne pepper, salt, and pepper. Cook for a few minutes until the tomatoes break down and the spices are fragrant.
- Add the cubed potatoes and enough water to cover the ingredients. Bring to a boil, then reduce the heat and let the curry simmer for about 45 minutes, or until the lamb is tender and the potatoes are cooked through.
- Stir in the plain yogurt and let the curry simmer for an additional 10 minutes.
- Adjust the seasoning if needed, then garnish with fresh cilantro before serving.
