Turkmenistan Lamb Curry (Turkmenistan Kuzu Körü)

Ingredients

  • 1 kg lamb, cut into cubes
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, diced
  • 2 potatoes, peeled and cubed
  • 1 cup plain yogurt
  • 2 tablespoons vegetable oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
  2. Add the lamb cubes to the pot and brown them on all sides.
  3. Stir in the diced tomatoes, cumin, coriander, turmeric, paprika, cayenne pepper, salt, and pepper. Cook for a few minutes until the tomatoes break down and the spices are fragrant.
  4. Add the cubed potatoes and enough water to cover the ingredients. Bring to a boil, then reduce the heat and let the curry simmer for about 45 minutes, or until the lamb is tender and the potatoes are cooked through.
  5. Stir in the plain yogurt and let the curry simmer for an additional 10 minutes.
  6. Adjust the seasoning if needed, then garnish with fresh cilantro before serving.
