Ingredients
- 1 cup red lentils
- 4 cups water
- 1 onion, chopped
- 2 carrots, diced
- 2 tomatoes, diced
- 2 cloves garlic, minced

- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Rinse the lentils under cold water and drain.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
- Add the diced carrots, tomatoes, and minced garlic to the pot. Cook for a few minutes until the vegetables start to soften.
- Add the rinsed lentils, cumin, paprika, and water to the pot. Season with salt and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the lentils and vegetables are tender.
- Adjust the seasoning if needed and serve the soup hot, garnished with fresh parsley.
