Ingredients
- 2 cups basmati rice
- 1 lb lamb, cubed
- 1 large onion, thinly sliced
- 3 carrots, julienned
- 1/2 cup vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 4 cups chicken or vegetable broth
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the cumin seeds and cook until they start to sizzle.
- Add the sliced onions and cook until they are soft and golden brown.
- Add the cubed lamb to the pot and cook until browned on all sides.
- Stir in the ground coriander, turmeric, salt, and pepper.
- Add the julienned carrots and cook for a few minutes.
- Rinse the basmati rice under cold water until the water runs clear, then add it to the pot and stir to combine with the other ingredients.
- Pour in the chicken or vegetable broth and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let the pilaf simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the pilaf with a fork before serving.
