Turkmenistan Pumpkin and Lentil Soup (Turkmenistan Kabak ve Mercimek Çorbası)

Ingredients

  • 1 small pumpkin, peeled and diced
  • 1 cup red lentils
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the diced pumpkin, red lentils, ground cumin, and paprika to the pot. Stir to combine.
  4. Pour in the vegetable broth and bring the soup to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 30 minutes, or until the pumpkin and lentils are tender.
  6. Season the soup with salt and pepper to taste.
  7. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
  8. Serve the Turkmenistan Kabak ve Mercimek Çorbası hot, garnished with a drizzle of olive oil and a sprinkle of paprika, if desired.
