Ingredients
- 1 small pumpkin, peeled and diced
- 1 cup red lentils
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 6 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced pumpkin, red lentils, ground cumin, and paprika to the pot. Stir to combine.
- Pour in the vegetable broth and bring the soup to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30 minutes, or until the pumpkin and lentils are tender.
- Season the soup with salt and pepper to taste.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
- Serve the Turkmenistan Kabak ve Mercimek Çorbası hot, garnished with a drizzle of olive oil and a sprinkle of paprika, if desired.
